It is a village located just 150km due west of Frankfurt and about 240km north-northwest of Strasbourg in Alsace.
The young current owner of a winery with a very long history in this historic region has begun an innovative experiment.

Jan was born into a family that owns the Stafelter Hof, founded in 862, the oldest winery in Germany with a history of 1158 years, and one of the oldest companies in the world (also listed on Wikipedia). are available).

It's been over 15 years since Jan started working in earnest at his family's winery.
Yang's father had doubts about the use of herbicides and pesticides since the 1960s and started growing organically, which is rare in this area.
Following in the footsteps of my father, we thoroughly practiced biologic cultivation, and in 2012 all of our fields were bio-certified.
And from 2014, I started to try to reduce the use of antioxidants in brewing more stoically (none in this land), and while I was in charge of the category under the name of Staffelter Hof, I was also in charge of my own name Jan Mathias.・Started a new project named Klein.
This is very different from the style of the Staffelter Hof, and is also very different from the typical Moselle style.
From harvesting to pressing the grapes, there is not much difference between the two categories.

The field owned by the family is about 10ha.
75% Riesling, 10% Müller Torgau, 4% Sauvignon Blanc, 5% Pinot Noir, the rest Portugieser, Muscat and Gelent.
Yang's wine is made from 2.5 ha of vineyards selected from this field.
There are places that are less than 1ha, so the number of production will be a small amount of 2,000 to 10,000 depending on the cuvée, but it can be said that Yang's new Mosel style is full of what he wants to do.
The soils in this area are gray or blue slate slate weathered soils called Schieferboden and produce wines with impressive aromas and flavors.
Sometimes clayey and limestone are mixed in the soil, but the limestone-free soil gives Riesling its unique minerality.
A field on a steep slope When I looked down at this village from the top, I was very impressed that all the roofs of all the houses were blue-black.
The slate absorbs sunlight during the day and slowly releases it to the vines at night, and also absorbs heat from the sun quickly and firmly, making it easy to warm and has a large heat retention capacity.
Jan believes the Moselle is probably one of the best places to make natural wines.
This is due to the low pH of the land, which maintains a cool climate even in this era of warming.
It is important to always maintain the health of the vines in any season, and to approach only in a way that is allowed by nature's providence without using any chemical approach, which is said to be the biggest challenge in the field.

All of his wine cuvee names are funny, sometimes ironic about modern society, and full of his humor.
As you can see from the fact that he uses Nirvana songs as wine names, he has been a big fan of grunge and mixture rock since his teens.
